Diabetic-Friendly Rice!
As the title suggests this rice has been cooked in a way that extracts a lot of starch from it and fits in a diabetic /dieter’s regimen.
Eating rice cooked this way has helped me take control of my blood sugar numbers so I decided to share this recipe with you. However, everybody might respond in a different way. Please keep on self-monitoring yourself and we expect you are under your doctor’s supervision.
This technique of cooking rice helps it to be lower in carbs.
The recommended portion size is ½ cup (cooked rice) in one serving.
Ingredients
1 ½ cup of Basmati rice (uncooked)(low GI rice)
10 cups of cold water from the same cup you had measured the rice with.
1 tbsp of Oil (your choice)
Directions
1) Measure rice from a measuring cup and pour it in a pot that you will cook the rice in.
2) Rinse the rice at least three times with cold water. Every time throwing away the cloudy water(which is actually the starch that gets drained out).
3) Fill your pot with 10 cups of water using the same cup that you had measured the rice with(the ratio of rice to water has to be 1:10) which means 1 part of rice to 10 parts of water.
4) Put your pot of rice and water on high heat.
5) Let it come to a boil.
6) Once the rice comes to a boil put the heat on medium-low and cover the rice with a lid.
7) Stir the rice once in between.
8) After 10 minutes on medium to low heat, it should be fully cooked if not give it a few more minutes.
9) Once the rice is fully cooked carefully drain the extra water away.
10) Rinse the cooked rice one more time with cold water and drain away from the excess water(this will help in removing most of the starch)and make the rice lower in carbs.
11) Put the pot of rice back on high heat for 2 minutes so that any extra water remaining will get evaporated.
12) Shut off the heat. Your rice is nearly done.
13) Pour 1 tbsp of oil and mix well. You can see the grains of rice are not sticking to each other showing that most of the starch from the rice has been washed away.
14) Enjoy this low carb rice with your favorite curry.
